The recipe below makes 4 burgers. You can always double the recipe and make a bigger batch.
Extra burgers can be frozen and make for a simple dinner on a busy night!
I used a potato masher to combine ingredients and make the dough but you can also use a food processor.
Adjust spices or added veggies based on your own tastes.
This is a recipe you could experiment with a little.
10-15 minutes
4 burgers
1 15oz can of mixed beans (can also use just black beans if you prefer). Drain and rinse
1/2 bell pepper, chopped (you can increase or decrease amount based on your own taste)
1/4 medium white onion, chopped (if you are looking for simple, as I always am, just sprinkle in onion powder to taste)
1 clove of garlic (again, keep it simple, use minced garlic or garlic powder)
dash of salt and pepper to taste
1/2 cup breadcrumbs
1 egg
You can make this with a food processor, but I kept it super simple and combined all my ingredients in a bowl and mashed with a potato masher.
Place bell pepper, onion and garlic in a large bowl with your beans and 1 tsp of paprika, cumin, chili powder, and a dash of salt and pepper. Mash, mash and mash some more until the beans break down and the ingredients come together. It's ok to have some bean pieces in the mixture, it won't be totally smooth.
Add in breadcrumbs and the egg and mix and mash some more.
Place the mixture in the fridge. You can leave it here up to 24 hours if you are prepping ahead. If you are making the burgers immediately, I left mine in the fridge for about 10-15 minutes. This helps the mixture set and the burgers will form better.
Scoop out the burger dough and shape into patties.
Place the patties on a greased saute pan over medium-high heat and cook on each side for about 5-7 minutes. You will know they are done when each side is a golden brown and the burgers are firm.
Cooked burgers can be frozen for up to 3 months. This is great if you make a bunch all at once and have a simple and delicious dinner to heat up on a busy night!
